Gyoza, often anglicized as “potstickers” are the Japanese dumplings made of ground meat and vegetables, all wrapped in a thin dough. Originally from China, gyoza typically contain ground pork, green onion, cabbage, and ginger. They are often served pan-fried, but gyoza can also be boiled: either way they require gyoza sauce, or dumpling dipping sauce, and we suggest this one. It contains all the traditional ingredients, primarily sweet vinegar, soy sauce, and garlic.
